This is one of the most
strikingly beautiful Russula species in the coastal forests of
Northern California. The firm texture and nutty flavor make it a favorite for the
table too. It lacks the fishy odor of the Xerampelina complex, which
makes it a very attractive choice to some. One of the key distinguishing
characteristic of this species is the finely zonate pileus. Illustrated here
is the Western American concept of Russula olivacea. The
European species is similar, but I do not believe that they are conspecific.
